Watermelon Lime Rum Cocktail

The average American will consumer over 15lbs of watermelon this summer. Just 15lbs? Really? We go through 15lbs a week in our house not just because on a hot day a cold slice of melon is on everyone’s mind, but also because it is just so versatile. How do we love thee? Let me count the ways…..Watermelon sorbet, Watermelon Smoothies, Watermelon Salad, Watermelon Juice, Watermelon Ice Pops and Watermelon Cocktails to name just a few. As the nights get longer so too does the hours we sit outside sharing a drink (or 3) with our friends on the front porch, and if you have ever sat in the sun drinking the night away you will know all too well that hydration is the key (and sadly rum does not count as proper hydration).
If I’m honest, I wanted a cocktail that would allow me to drink and hydrate at the same time; I’m not sure that the experts would agree that my recipe for Watermelon Lime Rum Cocktail does the trick, but in my mind it does; and that is kinda the same thing. As yummy as this is with the Rum, it is equally as fabulous without; and certainly more hydrating.
Ingredients , Serves 6
- 8 Ounces of Watermelon, blended/juiced
- 4 Ounces of Coconut Water
- 1 Lime, juiced
- 1 Lime, thinly sliced
- 8 Ounces of sparkling water
- 4 Ounces of lemonade, homemade or store bought
- 6-8 Ounces of light Rum
Simply add trimmed watermelon slices to a blender or juicer and blitz until liquified, typically around 10 seconds, to create the watermelon juice. Then, in a tall pitcher, add all the ingredients, whisk and serve over ice.
For an added treat, leave the sparking water and rum out of the recipe and freeze the remaining blended ingredients to make ice pops. Once frozen, add a 2 ounces of rum to a tall glass, place the ice pop in the glass, and then top with sparking water before serving.
