Top 20 Summer Avocado Recipes

For the last few months I have been working with the team at Avocados from Peru and Sam Henderson to put a festive spin on the start of summer and the Avocados From Peru season creating a digital magazine and a video that captures what I love most about summer.   I’ve had avocados on the brain for since March and to see the entire launch come to life is, well….. Monumental.  As I write this I’m looking at a map that hangs in my office, each country that I have visited in marked, and like a beacon, Peru is sitting there unmarked practically begging me to grab my passport and go.  Only I feel like these past few months have taken me there one taste at a time. We’ve been recipe testing, and looking at photos of Peru since the first spring flowers started to bloom, and as I stare summer in the face, I’m doing so with an avocado in my hand and dreams of Peru dancing around in my head.  What makes Peru so fabulous?
