When hosting any kind of gathering, we insist on a signature cocktail that embodies the theme of the party and a Poolside Summer Tonic certainly fits the bill. When our friend Russ asked for help in planning his get-together, the first order of business was what to drink. By infusing lavender and simple syrup and mixing it with premium gin, fresh lemon juice and club soda, it smells so good that you swear you can taste the flowers. This lovely and sophisticated cocktail combines the colorful backyard atmosphere and a summertime fizz for a delightful way to enjoy a warm evening.
Poolside Summer Lavender Infused Tonic
- 1 ½ oz. Lavender-infused simple syrup*
- 2 oz. Gin
- 1 oz. fresh lemon juice
- Splash of club soda
- Garnish with a twist of lemon
Directions: Pour gin, simple syrup and lemon juice over ice into a glass; stir. Add club soda and garnish.* To make Lavender-infused simple syrup, boil 1 cup of water with 1 cup of sugar and add 4 fresh lavender stalks (you can also use 2 teaspoons dried lavender buds) until the sugar dissolves (about 3 minutes). Remove from the heat and let steep for 30 minutes. Strain out the lavender and let cool.
