I enjoy baking a batch of these on Sunday mornings for a cozy and nutritious breakfast throughout the week. I often serve these with a side of salsa but my family enjoys a dollop of guacamole on top for a creamy topping; they slice each quinoa bite in half and spread a bit of avocado onto each bite. This recipe is incredibly simple and takes almost no time to prepare- just a few whole ingredients tossed together and baked in a muffin tin.
