Cheese and Sausage Kolache for #RealCheesePeople

Someone recently asked me what my favorite food was; their question was followed by a rare moment of silence while I tried to come up with the right answer. Really, my favorite food? That is like asking me to choose a favorite child. For me, food is like a melody; each note is made more beautiful by the notes that it blends with. Each note by it self is pleasant but blend them together and you have, well…. a melody. I love food that is comforting, evokes emotion and that makes you linger on your plate just a second longer while you enjoy that last bite. I’m not one for over complicating my cooking, or my ingredients. I like both to be simple, honest and memorable like these cheese and sausage Kolaches. They take a classic recipe, play with the savory ingredients I love and put a spin on them that is unexpected, making them the perfect summer party snack.
I mean, what’s not to love about real cheese? You know, the kind that when it melts creates buttery, gooey, strings of pure delight that you can’t help but get your fingers tangled in and grin while you put those last few strands in your mouth? Blend those with flakey pastry, savory ground sausage and dip them into a spicy salsa and you have a bite that will keep you lingering around the platter until you are utterly satisfied.
I first got the idea for a cheese and sausage Kolache when the team at Sargento® arrived at my doorstep with a steaming hot, fresh off the grill grilled cheese with my name on it. Literally, they called it the Coryanne and it was full of some of my favorite ingredients. I’m not sure about you, but a food truck arriving at my door to serve me lunch is not a normal, every day occurrence, and every time I make the Coryanne I think back on that cold Dallas day and am so glad they captured it on film. Each bite was a stringy, gooey bite of heaven and I kept thinking, what if I rolled this up and made it bite size? I didn’t want to re-create the grilled cheese, I just wanted that melted buttery savory bite, which is why I used the cheese from the sandwich and turned a traditional Kolache into something bold and new. The 100% real, natural cheese slices from Sargento makes prepping the Kolaches a breeze, and they bring out a bold cheese flavor that gives this bite size snack a flavor punch that makes them irresistible. While they are best right out of the oven, they are equally as delicious chilled. So make a few dozen for your next party, and if there are any leftovers, they will come in handy when you need that midnight feast that often grabs your attention after a summer party.
Ingredients for a dozen
2 Sheets of readymade puff pastry
4 Slices of Sargento Provolone Natural Cheese Slices
4 Slices of Sargento Pepper Jack Natural Cheese Slices
2 Cups of cooked ground sausage
- Thaw the puff pastry and cut the sheets into equal rectangles along the existing seams, then cut each rectangle in to 3 pieces.
- Line each square of pastry with a slice of Provolone and Pepper Jack Cheese, then top with the ground sausage meat before rolling into a tube.
- Pinch the ends of each tube so that they are slightly pinched together and place on a baking sheet lined with parchment paper.
- Bake for 20 minutes at 375F or until golden brown.
Note: The cheese will ooze from the pastry, it is meant to, don’t worry about it, I find that the best part is the crunchy cheese that melts outside the pastry.
